Gotta be honest here, we spent a while cracking out heads trying to figure out a low-carb “noodles” to go in this dish.
From yam to zucchini to a bunch of other alternatives, we finally found one that worked – beancurd noodles!
Individually sliced, these aren’t just low-carb, the beancurd offers great nutrition benefits with its 9 essential amino acids too!
Topping the curry off, we’ve got perfectly roasted aubergines and charred baby corn for a crunchy finish.
